I had the delightful pleasure of having lunch at Cactus Blue yesterday. I was treated like royalty by the staff. Elizabeth Ortiz, Jonas, and Pete treated myself and everyone of their guests like family. The atmosphere is safe, loving, and warm. The decor is clean, casual, and whimsical. Most importantly the food was delicious. Cactus Blue combines fresh, high quality ingredients with absolute skill to create unique and beyond flavorful dishes. The prices are a steal for the portion sizes and quality you get. I cannot say enough kind words. Cactus Blue is my new favorite lunch spot.
It was my first time trying out this place and even though it was lunch during the middle of a work week, the vibes were there. The staff were accommodating & friendly to us especially with someone who is celiac. I loved the decorations, the seating, the music - all very well done. The food came out fast and tasted amazing. Everything was fresh. It was a pretty great price for what you got. Definitely recommend to come here if you’re in the Lehigh Valley. It’s also so close to the schools which is great for after school or early outs!
A friend recommended Cactus Blue. We went there for the first time, and we were very pleased with the food. The food was delicious, and the portions generous. My husband likes spicy, I like mild. They offer you a choice of sauces, so we both were happy. We'll be returning.
Pro tip: skip straight to dessert & get chips and guac to go.
The chips are great, fresh and crispy but the cheese dip was gritty and passable. I wish I would have ordered a side of guac instead - there was a little bit on top of the chimi and it was really delicious. I'll be ordering that next time for sure. The enchilada was undercooked but the verde sauce was SO GOOD. Surprisingly the rice is more Puerto Rican style than Mexican - with the peas and a tomato base. It was just okay, honestly.
The carne fries had lots of fresh toppings, decent steak and was a large serving, but the fries were soggy and really salty. Just like almost everything here, there was a really good and pretty bad part. Mostly the sauces are great but a miss when it came to the food itself. Except dessert - I will be dreaming of the banana churro for a while. It also cost 2 of us over $80 for lunch and dessert, so that's kind of expensive. Especially when everything is served on paper bowls & takeout containers that literally fall apart by the time you're done eating. They got soggy and when you use a knife it shredded the bowl so there is food dripping into your lap. (Tables aren't solid surface)
And there are only 2 diet beverage options: diet coke and coke zero.
This was my first time trying. I ordered take-out through their website. Food was ready when I got there, everyone was friendly, and the place was nice inside too. The food exceeded my and my family’s expectations. Everything was delicious. We felt like the value for the money was also really good (lots of protein). Even my very picky 2 year old ate much more than she normally does which speaks volumes (to us at least). We will definitely be returning!
I love this place. Service is speedy and everything is so fresh. Pictured below is the two fest style tacos with steak, carne fries, and a 4oz side of guacamole with chips. Definitely a favorite quick dinner option!
My boyfriend & I were able to try Cactus Blue at the food truck festival yesterday, the truck actually caught our eye because of how well designed it looked. The workers were so friendly too! We got the walking chicken taco and queso chips. Everything was delicious. I can't wait to go back next Thursday!
Small clean ,good food, small portions kind of like a cafeteria or food truck you have to order at a window and pay for your items.
Then you sit down they bring it to you but there's no real wait staff.
